Scrambled Egg Muffins

 

1/2 lb. bulk pork sausage

12 eggs

1/2 cup chopped onion

1/4 cup chopped green pepper

1/2 teaspoon salt

1/4 teaspoon pepper

1/4 teaspoon garlic powder

1/2 cup shredded cheddar cheese

 

Cook sausage over medium heat until no longer pink; drain.  Beat the eggs then add onion, green pepper, salt, pepper and garlic powder.  Stir in sausage and cheese.

Spoon about 1/3 cup into greased muffin cups.  Bake at 350 for 20-25 minutes or until knife inserted in center comes out clean.  Makes 1 dozen.

Haven't read all the replies,but I see a lot of recipes that call for meat. Don't forget about us vegetarians.

@Desert Lily This is what I would do!  Muffins, bagles, croissants, etc. and fruit trays.  There is no easy way out and trying to cook for a breakfast is beyong.  Maybe a tray of deviled eggs with bacon bits made the night before?  

 

I would also offer hot water and tea bags--some herbal and decaf for those who don't do coffee.  People often forget that.  I insisted on it at work and some were surprised that there are people who don't drink coffee!
