Re: Boneless Pork Loin Chops - Ideas? Recipes?

I always soak my pork chops in buttermilk for 15-30 minutes before cooking.  Seems to make them tender.  After soaking, I just dredge in flour with Mrs. Dash and pan fry them.

Re: Boneless Pork Loin Chops - Ideas? Recipes?

I've cooked the loin pork chops with a can of mushroom or tomato, and about 3/4 cup of water.  I sprinkle with a little garlic and add some chopped onion.

Bake at 350 degrees, about 1 hr 15-30 min, until gravy thickens.  Great with mashed potatoes or rice.

Loin chips are my favorite for grilling as well.  They're good for cutting up for stir fry.

I don't buy center cut chops with the bone because the bone area cooks slowly.

Re: Boneless Pork Loin Chops - Ideas? Recipes?

We like this pan fried pork chops. Chops always turn out moist.

Pan Fried Pork Chops

4 pork chops, 1/2” to 1” thick
1 tsp salt
1 tsp dried thyme
1/2 tsp pepper
1-2 tbls oil

Let chops come to room temp about 30 mins before cooking

Sprinkle chops with salt, pepper & thyme.
Place oil in cast iron or stainless steel skillet. Need skillet with lid. (Don’t use non-stick pan) Heat skillet to medium heat 3-4 mins
Place chops in pan not touching each other.
Cook each side slowly about 4 mins per side until brown on each side.
Cover pan with tight fitting lid.
Turn off burner & let chops sit for about 8-10 mins.
Remove chops, deglaze pan with a little water, broth or wine & a tbls or so of butter. Serve as sauce. Yum!!!

Hi, @homedecor1 !  Try making a regular recipe of Good Seasons Italian Dressing in the cruet and pouring about 1/3-1/2 into a mixing container.  Add about the same amount of Grey Poupon or other mustard and mix.  Pour over pork chops and marinate 1 or 2 days.  Pork picks up the flavors wonderfully.  We are very with polenta (grilled) or roasted potatoes and grilled zucchini and a side of fruit-pepper jelly.  Delicious!

ETA: you can also add herbs, like chopped rosemary.
