This salad is a very popular and often requested recipe from a local afternoon TV program. It was demonstrated by a local guy from a radio program. I think it is a twist on a very good Ramen noodle salad, that you may be familiar with. Cooked chicken pieces could be added to this to make a main dish.

Bok Choy Salad

5 green onions, chopped
1 bunch Bok Choy, chopped
2 pkg. Ramen noodles, chicken flavor
1/4 cup sesame seeds
2 oz. pkg. slivered almonds
1/2 cup butter
1 of the flavor packets from the Ramen noodle packages
1 cup vegetable oil
1/2 cup sugar
1/4 cup vinegar
2 Tbsp. soy sauce

Brown the seeds, almonds, butter and Ramen noodles. (break the noodles up a little bit). Set aside to cool.
Mix flavor packet with the sugar, oil, vinegar and soy sauce. Put in a container with a tight fitting lid, tighten and shake vigorously. Put aside for later.
Chop the green onions.(I like them sliced on the diagonal). Slice the green tops from the bok choy and then chop the stalks into bite-size pieces.
When the noodle mixture is cool, add to the green onions and bok choy mix and toss. Pour dressing over salad and toss everything together.

This salad is delicious as a side but can also be the base for a light entree. Add strips of grilled and cooled chicken breast or cooked beef strips. You can also add other veggies and flavors. Try water chestnuts, mandarin oranges, red pepper strips, pea pods, carrots, cauliflower or broccoli florets.
