@spumoni99 Not sure, but I do know steam has different properties than boiling water. We've been steaming eggs old and new, in pressure cookers, egg cookers and stovetop steaming and they are just easy to peel. All of them.
And I even just take the lid off the steamer sometimes and don't bother to cool them and they peel fine. I also sometimes just put them in a bowl right out of the steamer and put some ice on top of them and that works to cool them as it melts.

I steam my eggs, plunge in ice water and peel. When cool, I cut in half, scrape out the yolk and mix up the devil yolks. I store the white halves seperate from the deviled yolks in the fridge.
Right before serving, I pipe the yolk mixture into the white halves.
Sometimes, when serving to a crowd or a party, I just stuff the eggs whites the night before. I store them in the fridge in a covered egg container. They are fine. They get devoured immediately the next day and it doesn't hurt to make the completely the night before you will serve them.
I usually make red beet eggs at the same time. They have to sit in the juice at least overnight to turn red.

Yes, for sure you can do this a day or two before, no problem and probably better.

According to a blog, the membrane inside the shell effects the peeling of a boiled egg.
The method I posted is from a farmer's wife who had just taken eggs from the chicken coop since fresh eggs are a major complaint.
I looked at about 5 different farmer's blogs with identical answers.

I never have trouble peeling anymore...and never a mess.
I make them in the IP now
1 cup water
Set manual time for
5 mins only
Natural release for 5 mins, then release all
5 mins in ice bath

This is completely off your subject, but I crush the shells in a bag and sprinkle them out around my bird feeders, helps the Spring birds make harder shells for their new ones. If you've ever obsrved a bird pecking along the curb of your street it is getting the grit, also I take the lint from my dryer and ball it up and then take it out for their nests.Been doing this for years, have lots of nests around in my trees. Read this years ago from an elderly man who wrote wonderful stories in the local paper. Happt Easter

I think I may do that, too. Thanks for the reminder that this is the easy option. I don't want to make more than 6 eggs and I'm always looking for "easy". lol
