Blueberries are inexpensive right now.  I've been making my favorite muffin recipe and thought you might like it as well.

 

Blueberry Muffins

 

1 beaten egg

2 tea baking powder

1/4 tea baking soda

1/2 tea salt

1 cup sugar (I use 3/4 cup instead)

1/2 cup buttermilk

7 Tab vegetable oil

2 Tab sour cream

Mix all those ingredients together using a large spoon or a fork

 

Add 1 3/4 cup flour and stir it all together until smooth

 

Stir in 1 1/2 cup blueberries (a 6 oz container)

 

Spray the muffin pan with nonstick coating.  Bake at 350 for 25 min

 

Makes 6 large muffins.  If you are using the smaller muffin tin be sure to adjust the baking time.

Blueberry muffins are my fave! Always on the lookout for new recipes for them!

OMG!  Made this tonight for a treat day at work tomorrow - but I had to sample one.  I'm a fan.  I normally don't make muffins because I never guess right on how much filling to put in the tins.  I doubled the recipe. Can't wait see what my coworkers think!
