Blueberry Lemon Ricotta Pancakes

INGREDIENTS
 
  • 1 1/2 cups buttermilk, or use whole milk
  • 3/4 cup whole milk ricotta cheese
  • 2 large eggs
  • 2 tablespoons salted butter, melted
  • 1 tablespoon honey, adding in more honey if you like a sweeter pancake
  • 2 teaspoons vanilla
  • 1-2 tablespoons lemon zest and 2 tablespoons lemon juice
  • 1 1/2 cups white whole wheat flour, or all-purpose flour
  • 2 teaspoons baking powder 
  • 1 teaspoon kosher salt
  • 1 1/2 cups fresh or frozen blueberries
  • 3-4 tablespoons blueberry jam (optional)
 
INSTRUCTIONS
    1. 1. In a large mixing bowl, whisk together the buttermilk, ricotta, eggs, butter, honey, vanilla, lemon juice, and lemon zest. Stir in the flour, baking powder, and salt. Stir until just combined. It's OK if the batter is a little lumpy. If the batter feels a little too thin, add 1/4 cup additional flour.

       

      2. Fold in the blueberries, and if desired 2-4 tablespoons of the blueberry jam, for an extra berry filled pancakes. Allow the batter to sit 5-10 minutes.

       

      3. Heat a large skillet or griddle over medium heat and add a little butter, or spray with cooking spray. Pour about 1/4 cup pancake batter onto the center of the hot pan. Cook until bubbles appear on the surface. Using a spatula, gently flip the pancake over and cook the other side for a minute, or until golden. Repeat with the remaining batter.

Those look yummy, but we live a keto/low carb lifestyle and can't use several of the ingredients in your recipe. However, for my B-Day in a couple of days, I'm making keto/low carb blueberry waffles and for the topping, LOTS of keto whipped cream and plenty of bacon & sausage too Smiley Very Happy

Oh yum!  I love pancakes and I love breakfast for dinner.  Sadly, it's just me and hubby and he likes neither.  I'm going to copy the recipe anyways. I live vicariously through others' cooking.

I have the same exact scenario @Icegoddess. DH doesn't like breakfast for dinner. Every so often, I'll make a large batch and freeze them. 

 

Thank you for sharing @Reconnaissant, I've been craving blueberry pancakes for a few weeks, and wanted to look for a similar recipe!

We use this recipe for the waffles and add blueberries...sometimes for a real treat, instead of blueberries, I'll add strawberry slices and Lily's chocolate chips! Smiley Very Happy

For dinner we split a BLT Chaffel with a side cup of

cabbage soup.  Very good.

We are both near Christmas babies - mine is the 23rd.

@yellowrose  I've never heard of chaffles before...I'll have to google about them. I noticed there was a recipe for keto cabbage soup w/ground beef and bone broth. I'll have to give it a try!

 

BTW, we both have the same B-Day...so an early Happy Birthday to you too! I'll be 61...oy. LOL
