This recipe was in our grocery store ad. I think it would also be good using fresh peaches since peaches are good with pork.
Blueberry BBQ Ribs
2 pints fresh blueberries
1/4 c brown sugar
1 ½ c balsamic vinegar
1 T minced garlic
1/8 c minced onions
1 t ground red pepper
½ c dark beer
1 T chipotle powder
5 lbs. baby back ribs
Preheat BBQ grill to med-high temperature.
Place blueberries in med-size saucepan. Add brown sugar, vinegar, garlic, onions, red pepper, dark beer & chipotle powder.
Bring sauce to slow boil over med. heat, stirring occasionally.
Cover the sauce with lid & allow to simmer over low heat for 60 mins.
Remove sauce from heat & transfer into a food processor or blender. Puree the mixture for 30 seconds.
Strain sauce & set aside.
BBQ ribs one each side for 45 mins. covered. Baste ribs often with sauce as they cook.
