Years ago while we were living in Spokane, Washington, I had a friend Billie who was a wonderful cook. She seemed to be a no fuss cook if you were with her when she was preparing food, but she always turned out the most flavorful and delicious food you could hope for. This is her broccoli salad recipe and it depends on Miracle Whip for its 'punch'. I am not a Miracle Whip fan. This is absolutely the only time I use it, but not to would ruin this terrific salad. I hope you like it.
Billie's Broccoli Salad
(2) 10-oz pkg frozen chopped broccoli
4 chopped hard cooked eggs
1/3 c finely chopped red onion
1 tsp salt
1 t Accent, monosodium glutamate
1/3 c Miracle Whip Salad Dressing*
Cook broccoli until not quite tender, drain well. (I do this by putting one whole, unwrapped box of frozen broccoli at a time in the microwave . I stand the box on end in a small dish and microwave for half the time. Then I turn box to its side, draining if necessary, and microwave for one minute less than the remaining time, drain.) Mix in eggs, onion, salt, Accent, and salad dressing. Optional: Decorate with mushrooms and olives. Yields: 6 servings.
* Note: Do not substitute mayonnaise for Miracle Whip.
