I'd say medium rare. Just don't cook it so long per pound. 😊❤😊

Thank you for this recipe reminder, ladies. I had just bought an eye of the round on sale for $2.49/lb thinking I might try it as a pot roast but DH thought it was too lean when I came across this thread. I did mine rubbed with oil, salt and pepper and garlic powder on a rack in a foil lined pan at 525 degrees, 5 minutes per pound (20 minutes for 3.98/lb roast), leaving the oven door closed for 1 1/2 hours and it came out great. I would say mine was medium rare and very tasty.
I will add this type of roast back into my shopping cart for the future.
FYI, if I remember correctly this recipe does not work with gas ovens. Ladies?
