Best ever Eye of Round Roast

 

 

Preheat oven to 450*

 

Blot off roast. Fat side up, rub on a little oil, salt, pepper and garlic powder. If you like more garlic, plug it full of garlic cloves. Bake at 450* for 10 minutes, then turn down oven to 250* . DO NOT OPEN OVEN. For every pound of meat, roast it 25 -30 minutes. I did a 3 pound roast for 1.5 hours. Take out and rest 25 minutes. I let it cool and sliced it thin for sandwiches. So yummy. 😊 ❤ 😊

I haven't made that in quite awhile.  It makes really good sandwiches.

I would have to set the oven, put someone in charge of the timer and then leave the house. 

I know I don't have the willpower to not open the door to check it.

We bought a cottage a couple years ago with an old stove, no self cleaning oven, hence no insulation.  I've had insulated ovens my entire adult life until now.  So my question is, are these directions good for both kinds of ovens?

Eye Of  Round Roast

 

Eye Of Roast

Salt and Pepper to taste

Kitchen Bouquet

 

Preheat oven to 500 degrees

Trim off fat from roast

Brush Kitchen Bouquet heavily on roast top and bottom

Place on rack in pan lined with foil

Bake at 500 degrees 5 minutes per pound for medium rare.

Turn oven OFF -DO NOT OPEN

Leave in oven for 1 and 1/2 hours.

Ready to slice.

@Barbarainnc  Does the meat come out medium rare or how?  I orefer rare, so assume I would roast it for less time, do you know?

 

I make a Prime Rib at christmas, roast it on a high temp for one and a half hours, then turn the heat off for two-three hours.

@CelticCrafter   Lol, I know what you mean, every Christmas day when the prime rib is roasting, I am constantly stealing slivers of the crispy fat and a little meat.  I am full by dinner time, lol, but still eat some more.

@mousiegirl Mine comes out extremely rare.  I get a 4+ roast.Smiley Happy
