I found this recipe in a Taste of Home magazine several years ago.

I finally tried it and it is good. Very easy to make too.  I don't know why it is called Lasagna Soup.......smells like Spaghetti Soup cooking....only cheese is on top when serving.

 

BEST LASAGNA SOUP

 

1 lb. ground beef

1 large green pepper, chopped

1 medium onion, chopped

2 garlic cloves, minced

2 cans (14 1/2 ozs.) diced tomatoes, undrained

2 cans (14 1/2 ozs.) reduced-sodium beef broth

1 can (8 oz.) tomato sauce

1 cup frozen corn

1/4 cup tomato paste

2 teaspoons Italian Seasoning

1/4 teaspoon pepper

2 1/2 cups uncooked spiral pasta

1/2 cup shredded Parmesan cheese

 

Cook beef, green pepper and onion over medium heat until meat is no longer pink.  Add garlic; cook 1 minute longer.  Drain.

Stir in tomatoes, broth, tomato sauce, corn, tomato paste, Italian seasoning and pepper.  Bring to a boil.  Stir in pasta.  Return to a boil.  Reduce heat; simmer, covered, 10-12 minutes or until pasta is tender.  Sprinkle with Parmesan cheese.

Sounds yummy and hearty!  Good meal by itself!

I wish I had a big bowl right now!  It has been really cold in Bflo. the last couple days!

 

I found a similar Lasagna Soup a while back except it used chix broth and Italian sausage.

 

It called for Mafalda pasta...which are long, thinner,  curly edged pasta that looks just like a very skinny lasagna noodle.  I had to get those in an Italian Market.

 

Then you mix ricotta w/ parm cheese (S & P) and plop a nice size dollop on top of the soup before serving.  As you eat, you grab bites of the cheesy mixture which really is just like lasagna.

 

Thanks for sharing!  I could eat soup all year long!

Respectlife.....thanks for note.  The recipe you have sounds more like a real "lasagna" type soup.  Either way, I am with you.....soup anytime all year.    MMmmmm....mmmmm....good, eh?

@walker:  Thank you for posting this recipe . . . I am also with you, I love soup. . . Heart soup anytime - all year . . . this one sounds really good  Woman Very Happy
