Beefy Homemade Noodle Casserole

Homemade Noodles:

2 beaten eggs

1 teaspoon salt

4 tablespoons milk

2 cups flour

Beat eggs, salt and milk together. Use just enough of the 2 cups flour to make a dough that sticks together. Flour board and roll out dough. Let dry for at least 4 hours. Cut noodles in your desired thickness.

Casserole:

2 1/2 pounds ground round steak

2 Tablespoons butter

1 teaspoon salt

dash ground pepper

1/4 teaspoon garlic salt

1 (8 ounce) can tomato sauce

1 (8 ounce) container sour cream

1 (12 ounce) container cottage cheese

1 3/4 cups extra sharp cheddar cheese...grated (reserve 1/4 cup)

1 recipe homemade noodles (recipe above)

Cook noodles in boiling water for about 15 minutes. Rinse in cold water and drain. Brown ground round steak in butter. Add salt, pepper, garlic salt and tomato sauce. Simmer 5 minutes. In a large bowl, combine noodles, cottage cheese, sour cream and cooked beef. Mix well. Add cheese (reserve 1/4 cup to use on the top). Toss lightly. Pour into a buttered 4 quart casserole dish. Top with remaining cheese. Bake at 350* for 25 minutes.
