Beef Enchiladas

1 pound ground beef

1/2 small onion...minced

1 small can sliced black olives...drained

1 1/2 pounds cheddar cheese...shredded

1 (16 ounce) can tomato sauce

1 (16 ounce) can enchilada sauce

12 corn tortillas

1 or 2 tablespoons oil

Brown meat and drain. Add minced onions and sliced olives. In a pan, combine tomato sauce and enchilada sauce. Heat through then keep sauce on low heat. In another pan, heat oil on medium heat. Heat tortillas in oil until transparent, turning over, and then remove with tongs and then dip them in the tomato sauce. After dipping, place some of the meat mixture and grated cheese (save some of the chesee for the end) on the center of each tortilla and roll up. Place in a large aking pan. When all the tortillas are rolled up and placed in a baking pan, pour the remaining tomato mixture over top of all. Sprinkle remaining cheese on the top. Bake at 350* for 30 minutes.
