I had about 2 cups left over so here's what I made:

 

To the rice in a large pot I added the following-

 

1 15 oz. can diced tomatoes with chilies

I can drained black beans

1 cup frozen corn

1/2 c. taco sauce

black pepper

drizzle of canola oil

 

Mixed and slowly heated all till hot and served with grilled pork steaks. Delish!!

Sounds good. I'm from Louisiana and rice is a staple in the pantry and I eat it any kind of way.

One of my favorite kind of rice---

 

Last night I fixed jasmine rice, poached salmon for a salmon bowl--got avos, cukes, fresh salad greens, sugar snap peas, green onions--put it in a bowl, then a squirt of kewpie mayo and some siracha on top. Was delicious!!
