Banana Walnut Muffins

YUM!!! Had very ripe bananas on my counter so I decided to make muffins. I used a recipe I found online so thought I would try it. They are so moist. I just ate 1 for lunch. Here's the recipe I used.

 

Easy Banana Nut Muffins

 

Prep Time 10 mins Cook Time 20 minsTotal Time 30 mins

 

  • 3-4 ripe bananas, mashed
  • 1/3 cup butter, melted
  • 3/4 cup granulated sugar (I used half sugar half brown sugar)
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 cup chopped walnuts, plus extra for topping if desired

I sprinkled the tops with Turbinado Sugar

 

  1. Preheat the oven to 350 degrees. Prepare a muffin tin by lightly greasing the cups or lining them with paper liners.
  2. In a large bowl, combine the melted butter and mashed bananas and stir with a large wooden spoon.
  3. Stir in the sugar, egg, and vanilla, then sprinkle the baking soda, baking powder, cinnamon, and salt over the banana batter and give it another stir to combine.
  4. Add the flour and nuts last and stir just until no streaks of flour remain.
  5. Evenly divide the batter among the cups of a lightly greased muffin tin. 
  6. Bake for 20-24 minutes, until golden brown on top and a toothpick inserted in the middle of one of the muffins comes out clean.

Makes 12 muffins. I ate the missing muffin. LOL!!!

Well, ya have to test them to make sure they are safe for others!  Smiley Very Happy

 

Lovely, though, banana walnut is one of my favs for cakey-type stuff.   In fact, I'm in the middle of one of the Grandma's banana walnut - love!  Smiley Happy

I have been making this recipe too!  It really IS easy!  I actually like that it has a smaller amount of melted butter instead of oil.  I also use half brown.

 

I add mini chocolate chips and sprinkle Turbinado (raw) sugar on top b4 baking.

 

They truly are very moist!!

 

When my daughter was still at home, I was making them fresh every Saturday morning.

I bet the addition of the chocolate chips would make it a good snack.

I heated 1 in the Air Fryer this morning for breakfast.

I should put a mini peanut butter cup in the middle & heat it up. YUM!!!

I like to do that for the added moisture plus the flavor is a little different.

I also like the turbinado sugar baked on top.

I really like banana nut muffins but DH rather have blueberry.

They are so easy to make.

Sounds yummy!! I love banana nut muffins,but I’m on a diet so I’ll have to pass 😢!!

Do you have a favorite recipe for Blueberry?  I have several...but must say...none are my 'favorite'.

 

Oh, btw, I had my second Shingles Shingrex shot Sunday. 

 

This second shot did not ache near as bad as the first, nor for as long.

 

This time I didn't let my arm stiffen (baby it).  I kept moving it even though it was sore.

 

It has only been 3 days this time and it is fine!
