I also like to add some ground flax seed (when I remember to add it). Often, I get it all mixed and in the pan before I think of it! {#emotions_dlg.rolleyes} It's good and moist. Smile

Banana Snack Cake

2 1/2 cups flour
1/2 teaspoon salt
1 tablespoon baking soda
1/2 cup unsalted butter, softened
1 cup sugar
3/4 cup brown sugar
2 eggs
1 teaspoon vanilla
3- 4 small ripe bananas, mashed (about 1 1/2 cups)
2/3 cup buttermilk
chopped walnuts, optional

Preheat oven to 350. Grease and flour 9 x 13 pan. Whisk together flour, salt and baking soda, set aside.
Cream butter in mixing bowl, add sugars and beat well until light and fluffy. Add eggs, one at a time, beating well. Add vanilla and bananas. Add flour mixture alternately with the buttermilk; beginning and ending with flour mixture. May add walnuts to batter or sprinkle on top. Pour batter into the prepared pan.
Bake for 30-35 minutes or until tests done in middle with a toothpick.
