This sounds good too....just read the Breakfast Bundt Cake Recipe. I like using my bundt pan. This and the other recipe would be good at an Easter Brunch. Thanks!

Oh WOW. I wanted to send you a big THANK YOU!!! Darn my luck, if I didn't have some bananas that I needed to use up and even though I did not have any instant butterscotch pudding mix (it is on my list for my next shopping trip and more bananas). I made it with Spice cake mix and instant vanilla pudding and gilded the lily with toasted pecans, walnuts and two kinds of streusel (one with regular sugar, butter and flour and the other dark brown sugar, butter and flour). This has to be one of the best cakes I have made in a long time, so moist it practically melts in your mouth, so thank you for sharing this wonderful recipe, my husband and neighbor thank you as well.

Ooh tkins, so glad you liked it. Your substitutions sound perfect! I love spice cake and nuts and the streusel too, wow. And they all pair perfectly with bananas.

I can see another bunch of bananas getting too ripe in the fruit bowl right now.Hmm, wonder what I should do with them Smiley Happy

Its in the oven- I made it for a client that has to come in today to pick up his rig- He has to drive 100 miles, and since he is originally from Jamaica- I bumped this up with a little dark rum and will glaze it with a rum glaze..

I had everything on hand, can't believe it!Oh yeah and the batter tasted great!

Lynne, thanks for bumping this up for me. I'm going to try this today, but I don't have butterscotch pudding--I've decided to try coconut cream instant pudding, and add chopped walnuts. Bananas and coconut taste great in other things, so I'll give it a try. I might try adding a little streusel like tkins said. This sounds like a delicious cake no matter how you "tweak" it! {#emotions_dlg.laugh}
