Balsamic Pot Roast....delicious!

I'd pinned this recipe a while ago on Pinterest and finally got around to trying it today. Wow, it is good! My favorite new pot roast recipe.Sort of a little sweet, a little tangy, slightly spicy. A really nice change from the same old pot roast, which we love, but it is nice to try something a little different.

Balsamic Pot Roast in the slow cooker.

4lb (approx) chuck roast

2 sweet onions chopped

5 carrots chopped into chunks

Put meat and veg into slow cooker.

Mix together:-

2 cups of beef broth (I used Better then Bouillon)

1/2 cup light brown sugar

1/4 cup balsamic vinegar (no substitutions!)

I TBSpoon soy sauce

Pinch pepper

1/4 tsp red pepper flakes

3 cloves garlic, chopped fine

Zest of a small orange

Mix well to dissolve sugar then pour over meat.

Set on low and cook for 7 hours (approx).

I then took the meat and veg out and poured the liquid into a saucepan and simmered and mixed in about 2 TBSpoons cornstarch that I'd mixed with a little water. Simmered a few minutes to thicken.

I served it over mashed potatoes with steamed green beans on the side. It was a really delicious dinner. Even my husband who is very mean with the compliments, lol, said, "this is really good!"
