BALSAMIC GLAZED SALMON

Serves 1

1 cup balsamic vinegar
1/4 cup sugar
1/4 cup honey
1 salmon filet
1 tablespoon olive oil
1/2 cup orzo, cooked
2 tablespoons fresh spinach
2 tablespoons roasted bell peppers
1/2 tablespoon sun dried tomatoes
1/2 tablespoon Parmesan Cheese, grated
1 lemon wedge
salt & pepper, to taste

Glaze: Place the vinegar, sugar and honey into a small sauce pot and bring to a simmer on a medium heat stirring until sugar and honey have dissolved. Continuing simmering for 3 to 5 minutes on medium low heat until the liquid has reached the consistency of pancake syrup. Store at room temperature.

Salmon: Preheat oven to 400*. Marinate the salmon with the glaze. Season with salt and pepper. Bake on a sheet tray for about 7 to 9 minutes in oven. Cook to the desired internal temperature. Place on a plate.


Orzo: While the fish is cooking heat the olive oil, orzo, roasted peppers and fresh spinach in a saute pan until warm. Finish the mixture with Parmesan cheese.

To Serve: Place this mixture next to the salmon. Drizzle with balsamic glaze on top and around the sides of the salmon. Garnish the dish with a lemon wedge quarter.
