Here is another way to use zucchini.

Baked Zucchini Sticks

2 zucchinis

1 egg, beaten well

1/3 cup breadcrumbs

1 T Parmesan cheese, grated

1 tsp garlic powder

1 tsp Italian herb seasoning

Cut the zucchinis in 3 x 1/2 inch sticks. Lightly grease cookie sheet. Blot out excess moisture in cut zucchini. In a small bowl combine beaten egg, Parmesan cheese, garlic powder and herb seasoning. Dip each stick in egg mixture and then in breadcrumbs. Place on cookie sheet. To achieve a crispier stick, spray the coated sticks lightly with cooking spray.

Bake at 425 for 20 minutes, or until browned.

These are really good dipped in marinara sauce!
