Baked Pork Chops With Stuffing

I am normally a totally from scratch cooker, I hate mixed and prepared stuff but occasionally I do make an exception and I just did it because I was exhausted and i was craving this dish my Mom used to make when I was a kid. I took 4 pork chops (bone in), trimmed the fat and generously seasoned with my fave seasoning (oenzeys northwoods). I placed them in a baking dish with a slice of onion under each chop and then I topped each chop with about 2/3 cup of cornbread stovetop stuffing. Then I poured some campbells healthy request (the lower sodium and lower fat version) cream of mushroom soup over the top. I didn't dilute the soup, I used it full strength. I covered it and baked it for 30 minutes and then uncovered and baked another 15. It is delicious! The meat is tender and juicy and the stuffing is moist with a little crunchiness on top. Just like I remember. It took 10 minutes to put together too. {#emotions_dlg.biggrin}
