This is an easy recipe that can be used for any white fish. We have halibut my husband caught/froze and so I'm always looking for new ways to prepare it.
It can be baked or grilled. Quick marinade of 30 minutes - up to a couple of hours - then you have a moist and tasty halibut entree. I grill on a plank or bake in oven, depends on weather. I usually serve this w/ risotto and asparagus.
The Jo Cooks site has some interesting recipes, from entrees to dips. Some of her dips look good, but I have not tried any of them. On her website Jo shows many pictures and has more information.
Baked Lemon Garlic Halibut - Jo Cooks
Ingredients
3 tablespoon olive oil
⅓ cup freshly squeezed lemon juice
1 teaspoon smoked paprika
½ teaspoon red pepper flakes
6 cloves garlic (minced)
½ teaspoon ground black pepper
1 teaspoon sea salt (I use Kosher salt)
1 teaspoon dried dill (I use fresh dill)
1 pound halibut fillet (can be portioned ahead of time, which is what I use)
1 tomato (diced) (any tomato works, I use Campari tomatoes)
2 tablespoon fresh parsley (chopped)
Instructions
In a 9×13 inch casserole dish whisk together the first 8 ingredients.
Place the halibut fillet in the casserole dish, then flip it over to get some of the marinade on both sides. You can also cut the halibut fillet into smaller individual pieces, if preferred. Cover with plastic wrap and marinate for about 30 minutes to 2 hours in the fridge.
Preheat your oven to 350 F degrees.
Remove the plastic wrap from the casserole dish and place the dish in the oven. Bake for 20 minutes or until cooked through.
Serve immediately, garnished with some parsley and/or chopped tomatoes, if desired.
Notes
Baking time should be adjusted based on the thickness of the halibut.
You can use any type of white fish that you prefer.

I tried to buy some halibut, one of the few fishes I like, but I couldn't get financing.

I know, cost of seafood is really high right now. I'm glad we have halibut and salmon in the freezer.

@kate2357 when i read the recipe i said "mmm yum" out loud lol
I will always want to eat seafood with lemon, always. This is pretty too. Enjoy your stash!

DH said something similar the other day. He stopped by the store to pick up a few things. He said he had to make a stop at the bank for a loan for eggs. LOL!!!

I have Sea Bass in the freezer I think would work here!
What about Salmon? Any thoughts on how the flavors would blend with Salmon?
I am on AD here for Faroe Island and have a freezer full of it!!
