I made these for the first time on Thanksgiving. They were gobbles up in about 5 minutes, everyone raved! Will DEFINITELY make these again. I like them because you can assemble them early and pop them in the oven before your guests arrive!
I got this recipe from tastykitchen.com
1 lb bacon
1 can chunked pineapple (large chunks)
1/2 cup brown sugar
set oven to 375F. cut the pound of bacon in half. Put the brown sugar in a bowl. Take half a slice of bacon and dredge in brown sugar. Put a chunck of pineapple on one end of the bacon slice and roll up, secure with a toothpick. (I also sprinkled some brown sugar on the top) Put a cookie cooling rack into a foil lined jelly roll pan. lay the bundles onto rack. Bake for around 25 minutes until bacon looks crispy. Enjoy :-)
