Made these for dinner last night. Delish! Don't be put off by what looks like a long recipe. They go together fast.

Buffalo Chicken Wraps
(or sandwiches)

Ingredients:

About 2 pounds of chicken tenders, or lightly pounded skinless, boneless chicken breasts

For the chicken:
1 cup flour
1 tablespoon salt
1 tablespoon sweet paprika
1 tablespoon onion powder
1 tablespoon dry mustard
1 teaspoon granulated garlic or garlic powder
1/2 teaspoon white pepper
1/2 teaspoon ground cumin

oil & butter for sauteing
Buffalo Sauce, recipe follows

For the wraps (or sandwiches):
warm flour tortillas or toasted rolls
shredded lettuce
diced tomatoes
Blue Cheese or Ranch dressing

Buffalo Sauce:
1 & 1/2 cup Frank's Red Hot
2 tablespoons white vinegar
1 tablespoon brown sugar or honey
3 tablespoons butter
Add ingredients to medium saucepan, bring to simmer, & cook for about 1 minute Turn off heat.

Directions:
1. Stir together dry ingredients. Lightly dust both sides of chicken to coat, shake off excess, lay pieces on sheet pan or plate & keep nearby.
2. Heat oil in skillet over medium heat, add a pat of butter, swirl, then saute chicken until done. It goes faster if you lightly brown one side, flip, turn heat to low, & cover & cook for a few minutes. You'll have to do this in batches.
3. Place cooked chicken in large mixing bowl, & pour Buffalo sauce over to thoroughly coat. Let sit for a few minutes & toss again.
4. Cut chicken into bite sized pieces, & tuck into warmed flour tortillas w/ shredded lettuce, tomatoes, and choice of dressing.

** For sandwiches: Leave chicken pieces whole & serve on toasted rolls w/ sliced tomato, lettuce leaves, and choice of dressing.
