BROWN and/or WHITE SUGAR in recipes?

Can I use brown sugar in place of white granulated sugar in a recipe. Suppose I wanted to bake  a muffin, are these sugars interchangeable. Or, can I use part brown and part white?

I made bran muffins and wondered if I could add brown instead or at least part?

Brown sugar just has mollasses added to it I believe, it should be fine for a bran muffin.

How to Make the Sugar Switch

The brown-sugar-to-white-sugar conversion is easy because the measurements remain the same. If a recipe calls for 1 tablespoon of granulated white sugar, substitute 1 tablespoon of brown sugar. If it calls for 2 cups of white sugar, substitute 2 cups of brown sugar. Even the most math-challenged of bakers should be able to handle it.

There's one caveat here, though. Granulated white sugar is a dry, freely flowing grain that naturally fills the space into which it's poured. But brown sugar has a higher moisture content that causes it to clump and sit in lumps. When measuring it, pack it down into the cup or spoon so it actually fills the entire space.

Brown sugar will result in a moister and softer baked good.

I substitute with coconut sugar often in baking

Absolutley! My mother used to do it quite a bit.  Especially in pumpkin pie..half white/half brown.

For bran muffins, I would for sure use either just brown sugar or a  half and half mix of brown and white sugar. I prefer the taste of brown sugar and use it in quite a few recipes that only call for white sugar.

I often mix sugars in a recipe but I wouldn't use 100% brown in a recipe that calls for white.  It's going to give a different taste and texture, which I don't care for.

Thanks every one who posted.

I am going to make the bran muffins with 1/2 and 1/2 sugars.

Will be interesting to see? taste? the difference.

Will also try this in other recipes.

UPDATE

I used 1/2 brown and 1/2 white sugar to bran muffins.

And, I could not tell the difference between using half and half sugars. They were both good muffins.
