BOURBON-GLAZED CARROTS--4 servings

Peel and slice lengthwise 2 lbs. of  carrots 

 

Bring them to a boil in a large pot of salted water.

 

Reduce heat to medium-low and simmer until crisp-tender, about 10 minutes.

 

Drain and transfer to a bowl.

 

In saucepan, stir together 1/4 cup each of brown sugar and butter, plus 2 tablespoons bourbon.

 

Simmer, stirring, over medium heat  until thickened, about 10 minutes.

 

Pour over carrots.  Top with cracked black pepper.

Bourbon you say?    I might even get to LIKE carrots..............

As a former drinker, I still love bourbon.  The alcohol supposedly cooks off, so I've let my  imagination run wild.  How about bourbon glazed brussel sprouts,bourbon glazed apples with bacon, bourbon glazed cabbage with onions?
