BLT Potato Salad--serves 6-8

BLT Potato Salad

 

2 pounds small new potatoes

Kosher salt & fresh-ground black pepper

2 tablespoons sour cream

2 tablespoons mayonnaise

1-1/2 tablespoons white wine vinegar

12 ounces assorted-color cherry or grape tomatoes

4 slices bacon, cooked & broken into pieces

1-1/2 cups baby arugula

Chopped chives, for serving

 

Bring potatoes to boil in salted water, reduce to simmer

and cook until just tender, 10-15 minutes.

 

Drain and run under cold water to cool.  Once cool, cut in half  (or quarters if large).

 

Whisk together sour cream, mayonnaise and vinegar in bowl, season with salt and pepper.

 

Add potatoes and toss to coat.

 

Fold in tomatoes, bacon and arugula.

 

Top with chives.

I make a version of your recipe but double up on the mayonnaise and eliminate the sour cream.  I use chopped romaine as my leafy green, and stir in some sliced red onion and dill pickle relish.  It's a nice alternative to regular potato salad.

I've never added bacon to my potato salad but I do use Baconnaise (bacon-flavored mayo) wnen making it.  So I can imagine BLT Potato Salad would be really tasty.
