It's so hard to believe that Memorial Day is around the corner! So I'm thinking about side dishes. I usually do the usual potato salad, baked beans, etc. What are your favorites?

Cole slaw, corn on the cob, and pinto beans.

Some type of a non-dairy cucumber salad or a non-dairy coleslaw. I used to make a coleslaw using ramen noodles, that was my go to for a covered dish.

I think I've had that slaw with ramen noodles - so good and different!

A dessert that includes berries as a main ingredient. One of my favorite recipes is for strawberry cobbler.

@Knit-Chick I love a loaded pasta salad with rotini and tortellini, grape tomatoes, fresh basil, Italian meats and cheeses, maybe fresh cucumbers, and a good Italian or oil and red vinegar dressing. Just leave me alone with that bowl!!

Grilled romaine lettuce, corn on the cob, sliced large beefsteak or heirloom tomatoes.

I'm with @PA Mom-mom in loving a loaded pasta salad and will make it, along w/ bbq beans for most summer events. My DILs are tasked w/ making the potato salad. They use my recipe and make up a boat load. I might make potato salad for Jack & I once or twice a year. I CANNOT be trusted w/ potato salad in my fridge.
I also like to make a berry dessert ... typically fresh raspberry or strawberry item. I make a great white layered cake w/ fresh strawberries and a whipped cream cheese icing. Oh la la ... so tasty.
Later, for 4th of July we will have a huge qty of Ranier cherries and iced watermelon instead of a dessert cake. We make pigs of ourselves eating the local Ranier cherries.

Any time someone asks for a side dish....I re-share a FAB, easy recipe that

This is ridiculously fast and easy if you need to make a last minute side dish for a barbecue. I have used it to "stretch" when I have had unexpected guests.
1 cup onion, diced
1 T vegetable oil
1 t garlic, minced
2 T apple cider vinegar
2 cans black beans, rinsed and drained (about 15 oz each)
1/2 cup maple syrup
1/2 cup ketchup
2 T minced chipotle chiles in adobo
1 t dry mustard
1 t Worcestershire sauce
Salt to taste
Saute onion in oil over medium heat until softened. Stir in garlic and cook 1 minute.
Deglaze with vinegar and bring to a boil. Add reminaing ingredients and simmer 10 minutes.
