4 6-oz tilapia fillets
1 T dried basil
2-3 cloves garlic, minced
1 t lemon zest
1/4 cup dry white wine
salt and pepper to taste
2 T butter cut into small cubes
1/3 cup fresh basil leaves, slivered
6 T grated Parmesan cheese divided
1 t paprika
Preheat oven 350. In small bowl combine dry basil, garlic, zest and wine. Let sit for a few minutes. Arrange fillets in buttered baking dish. Pour the wine mixture over the fish. Season with salt and pepper. Dot the fillets with butter and top with fresh basil. Sprinkle with half the cheese. Bake for 20-25 minutes until fish flakes easily. Sprinkle with remaining cheese and paprika and serve.
Do not overcook the fish. I found the fish was done sooner than 20 minutes.
