BAKED LIMA BEANS

1 (16-oz) package large dried lima beans; 7 cups water; 1 medium onion, quartered; 1 pound chopped ham; 1/2 cup molasses; 2 to 3 Tbsps brown sugar; and 4 cups water.

Sort & wash beans. Place beans & 7 cups water in a large Dutch oven; bring to a boil, and boil 1 minute. Cover, remove from heat, and let stand 1 hour, drain.

Spoon half of beans into an ovenproof Dutch oven; top with onion & chopped ham. Add remaining beans, molasses & brown sugar; pour 4 cups water over brown sugar. Cover with aluminum foil.

Bake at 350 degrees for 3 to 3 1/2 hours or until beans are tender, removing foil after 1 1/2 hours. YIELD: 8 to 10 servings.
