8 oz cream cheese, softened
2/3 cup white cheddar, grated

1 t garlic powder
Kosher salt
Freshly ground black pepper
12 slices bacon, cooked and crumbled, divided
1/2 cup toasted pecans, chopped and divided
1/2 cup chives, chopped and divided

 

In a large bowl combine cream cheese with cheddar, garlic powder, half of the bacon, half the pecans and half the chives.  Season with salt and pepper and stir until combined.

 

Place cheese mixture onto a piece of plastic wrap and form into a log shape.  Place in fridge to harden slightly.

 

On a large plate, combine the remaining chives, bacon and pecans.  Stir until they are evenly distributed.  Roll cheese log in mixture pressing more toppings on with you hands if needed.  Place on serving dish with crackers.  

 

I used extra sharp white cheddar and the fine side of the grater.   If you make ahead take out of fridge at least an hour before serving.

You can not go wrong with bacon.
