Avocado "crack" Dip

I've never made this before, but since we're all avocado fans around here, I'll be serving when we have our friends next weekend for a Game Night.  I thought I'd share.

AVOCADO CRACK DIP RECIPE

INGREDIENTS:

  • 3 large avocados (chopped into small chunks)
  • 1 pint cherry tomatoes (chopped into small chunks)
  • 4 ounces plain crumbled feta cheese
  • 1 small bunch of fresh parsley (chopped fine)
  • 1 tbsp olive oil
  • 1.5 tbsp red wine vinegar
  • 1/2 tsp or more of garlic powder
  • salt and pepper to taste
  • 1/4 cup chopped fresh onion or 1 tsp onion powder (optional)
  • 1 bag tortilla chips for serving

INSTRUCTIONS:

  1. Except for the avocados, combine all of the ingredients together in a bowl.
  2. Refrigerate for a few hours or overnight, and then chop the avocados and gently stir them in just before serving.

TIPS:

  • I’ve also made this with cottage cheese in place of the feta, and YUM! It’s surprisingly good.
  • Feel free to use fresh garlic and any tomato of your choice. I like the cherry tomatoes because you get more skin and less of the juicy guts.
  • My family is not a raw onion fan, so I always omit them from recipes, but they are a nice addition if you’re into that.

@house_cat.  Yum, sounds good but I couldn't eat guacamole without onion in it.

@house_cat  Thanks for the recipe.  I make that and I add canellini beans to it. I also sometimes sub goat cheese for the feta. The goat is less salty but it does mush in whereas the feta stays stable. The goat cheese has a completely different flavor. It's much milder than feta. The feta gives more of a punch. I could spread goat cheese (especially the expensive ones) on cardboard. That's just me.

I can put feta into anything and my DH will like it... so that will be my choice.  Goat cheese is a great idea, too, but I'm not liking the idea of cottage cheese at all.

Looks delicious.  I would also omit the onion.  Maybe add some cilantro too.

Yeah, interesting that the herb is parsley and not cilantro. I think I would do half and half as I adore cilantro but I realize many people do not.

I am so tired of the term "crack" in recipes.  I feel we have hit the tipping point and people need to be a little creative with recipe titles.  Looks like a jazzed up guacamole to me.
