Just picked up a huge bunch of fresh asparagus at the store for 88 cents a pound!    What a deal!

 

I put mine in a bag with olive oil, lemon and some garlic powder and shake it all together.  Then I place them on my George Foreman grill for 8 min and they come out perfect!    If I don't eat them all warm, I refrigerate and put them in my salads cold.

 

Those little grills are wonderful creations!

 

I'll probaby go back for more before the week is out!

That sounds like a good way to prepare asparagus (hubby's favorite vegetable). I like it added to salads too for a nice change and unexpected lift.

 

Costco used to get in a brand called Victoria Island and it was THE BEST. But I didn't see it there last year. That season is very short so perhaps I missed it. If you see that brand - jump on it!

Asparagus Milanese

4 Servings

 

2 bunches Asparagus (trimmed*)
4 Tablespoons Extra Virgin Olive Oil (divided)
4 large eggs
2 Tablespoons butter
Parmigiano-Reggiano 

Juice of 2 Lemons
Zest of 1 Lemon
Salt and freshly cracked Black Pepper

 

Preheat a grillpan to medium-high heat.

 

Toss the asparagus in 3 Tablespoons olive oil and season with salt and pepper to taste. Grill for about 3 minutes per side, the asparagus should be bright green and charred in spots.


In a nonstick skillet over medium heat, add the butter and gently fry the eggs until just set, about 2 to 4 minutes.

 

Divide the asparagus among four plates, and top each with an egg.  Shave Parmigiano-Reggiano on each serving.  Grate the zest over the plates and squeeze lemon juice over each serving. Season with salt and coarsely ground black pepper.

 

*Before cooking, snap off the bottom of the stem at the natural breaking point.

Must be a bumper crop this Spring, I've picked up some good deals also, my very favorite, just olive oil, seasoning, in a 400 oven to brown a bit, yummy.  Or I do it layered in a casserole, sprinkle o/o, dots of butter, some lemon juice, bread crumbs & romano cheese, seasonings of choice, yummy

My husband hates asparagus which is a good thing because then I get to eat it all.  My favorite way is coated in a bit of olive oil, salted then cooked in a 400 degree oven for 10 minutes.  This vegi is my all time favorite.

Can you tell me when you put it in the oven, does it get crisp or soft?   

 

I just had some tonight in the Foreman grill and it was divine.  I let some cool and added to my side salad.    So good for you too.

 

I will definitely be stocking up at that store this week!

sounds great - have been thinking about purchasing a smaller george forman grill-this will be great for that

@Frosted Cake, 88¢ a pound is indeed a deal.  The best price I could find yesterday was $2.50 a pound.
