Asparagus is in season...many ways to cook it

Here are just a few recipes-- with minor variations-- for enjoying one of my most favorite vegetables.  Anyone have any others?

 

 

Tip for storing asparagus for several days after purchase: Trim stems and stand them upright in bowl with a couple inches of water.

 

Roasted Asparagus w/ Parmesan

Oil or cooking spray
1 pound fresh asparagus, tough ends trimmed
¼ tsp sea salt
¼ tsp garlic powder
½ cup shredded Parmesan cheese

Preheat oven to 400 degrees. Spray a 9x13-inch baking dish w/ oil or cooking spray.
Lay asparagus in single layer in dish and lightly spray with oil.
Sprinkle with salt and garlic powder.
Bake, sprinkling cheese halfway through baking, until fork easily punctures thickest part of stem, about 10 minutes if asparagus is thin, 20 minutes if thick.

Lemon-Parmesan Broiled Asparagus

¼ cup mayonnaise
4 tsp. olive oil
1-1/2  tsp. grated lemon zest
1 garlic clove, minced
½ tsp. seasoned salt
½ tsp. pepper
1 pound fresh asparagus, trimmed
2 Tbsp. shredded Parmesan cheese
Lemon wedges, optional.

 

Preheat broiler. In bowl, combine first 6 ingredients.
Add asparagus.
Place in single layer on wire rack over a foil-lined 15x10-inch baking pan.
Broil 5-6 inches from heat until tender, 5-7 minutes.
Sprinkle with Parmesan. Serve with lemon wedges if desired.

Roasted Asparagus with Parmesan

 

2 bunches asparagus (1-1/2 pounds)
One tablespoon olive oil
Coarse salt and fresh ground pepper
¼ cup finely grated Parmesan cheese

 

Preheat oven to 450 degrees. Trim tough asparagus ends.
On rimmed baking sheet, toss asparagus with oil, season with salt and pepper.

Spread in even layer in pan. Sprinkle with cheese.
Roast until asparagus is tender and cheese is melted 10-15 minutes.

Grilled Asparagus w/ Balsamic Vinegar

 

1 pound thin aspargus spears.

1 tsp. olive oil

1/4 tsp. Kosher salt

1/8 tsp. black pepper

Cooking spray

1 Tbsp. balsamic vinegar

 

Prepare grill.

Snap off tough ends of asparagus.  

Place in bowl or shallow dish.

Drizzle with oil, sprinkle salt and pepper, tossing 

   well to coat.

Place asparagus on grill rack coated with cooking spray.

Grill 2 minutes each side or until crisp-tender.

Place asparagus in bowl, drizzle with balsamic vinegar.

Serve immediately.

I like it grilled on a medium-hot grill for 3-4 minutes.  Buy spears that are thick and bright green.

Asparagus is probably my favorite vegetable.  It's one of my go too vegetables all year long.

 

One of my favorite ways to cook it is to just cut off the stems, put it in a baking dish, put a little olive oil on it and sprinkle with sea salt and pepper.

 

On holidays we often wrap it in bacon and bake in the oven too.

Love asparagus. Lately I buy the fat ones and just simmer in water for a few minutes till tender. Delicious fresh taste.

Most of my other veggies I like roasted or grilled.

Asparagus is one of my faves.  I have also lightly coated it in mayo, rolled it in panko/parm and roasted it . . . yum!

I love asparagus . . . but only if it is roasted/baked. The version we make is very similar to the third one you posted, @novamc1, but we drizzle the spears with a combination of butter and oil for flavor and even cooking.

I love Asparagus. I usually roast mine with mushrooms. Next time I'm gonna try it with a little Parmesan

@proudlyfromNJ, I like the fat ones also. For years I believed and always purchased the tiny new thin asparagus. Once I  was forced to buy the larger type because that was all that was available and discovered that Emeril was wrong. The large ones had so much more flavor. As much as I love roasted vegetables, I do not care for roasted asparagus.

@tiny 2.  I did the same thing. Always the thin ones. My friend always told me to buy the thinnest ones you could. Last time she ate at my house and I served fat ones, she and her husband looked at each other and made a face. Don’t know if I convinced them!

I'm another big fan of asparagus - medium or larger in thickness - never the thin ones! I like them grilled, but usually just snap the ends off, lay in a small rectangular Pyrex dish and add a couple tablespoons of water. Cover with a paper towel and microwave for about 4 or 5 minutes. Carefully pour the water off and drizzle with olive oil and Lawry's Garlic Salt.
