I am not but I like to eat baked potato topped with a mix of red onion.tomato and avocado that has minced garlic,olive oil and balsamic vinegar

I make white beans with red onions or sweet onions (if good) , tomatoes, avocado, basil, evoo and balsamic vinegar. Almost the same as the other poster. I also make veggie burgers that we love and sweet potato burgers that are great but I'm on my way out so I'll try to post the recipes later. Have a good day.

I was for many years and I had an excellent recipe for "ricotta cheese" made with walnuts. I know it sounds funky, but it was very good.  I made stuffed shells with it, lasagna and just about anything else that would call for a ricotta filling.

I'll try my best to find it and post it for you.
