I got this recipe from Taste of Home.  It's listed as an appetizer but I made it for a potluck, thinking it would be easy for people to take a serving of stuffing in a self-contained ball.  They turned out great!

 

Ingredients

1/4 cup butter, cubed

1 lg. onion, finely chopped

2 celery ribs, finely chopped

3 large eggs, beaten

1/4 cup minced fresh parsley

3/4 tsp. salt

1/2 tsp. dried thyme

1/4 tsp pepper

9 cups soft bread crumbs

2 medium apples, peeled & finely chopped

 

Directions:

1.  Preheat oven to 350.  In a large skillet, heat butter over medium heat.  Add onion and celery; cook and stir 4-6 minutes or just until tender.

2.  In a large bowl, mix eggs, parsley, salt, thyme and pepper.  Stir in bread crumbs, apples and the onion mixture.  Shape into 2-in. balls.  Place on a foil-lined 15x10x1-in. baking pan.  Bake 30-35 minutes or until golden brown.
