INGREDIENTS
  • 4 cups Granny Smith Apples, chopped into small pieces
  • 2 cups sugar
  • ½ cup vegetable oil
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla
  • 2 cups all purpose flour
  • 2 teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 teaspoon salt
  • ½ cup milk
  • 1 cup pecans roughly chopped
  • Brown Sugar Cream Cheese Frosting:
  • 1 (8 oz) package cream cheese frosting, room temperature
  • ÂĽ cup butter, softened
  • 2 teaspoon vanilla
  • 1 cup golden brown sugar
 
INSTRUCTIONS
  1. Preheat oven to 350 degrees and grease and flour a 9x13 inch baking pan. Set aside.
  2. In a large mixing bowl, combine apples and sugar. Stir in oil, eggs, and vanilla.
  3. In another mixing bowl combine flour, baking powder, baking soda, cinnamon, nutmeg and salt. Add the flour mixture to the apple mixture. Add milk and stir until just combined. Add chopped pecans.
  4. Pour into prepared 9x13 inch pan. Bake for 30-40 minutes or until toothpick comes out clean. Let cool completely.
  5. To make the frosting: Beat the cream cheese until smooth. Add butter and continue to beat until smooth scraping down sides when needed. Add vanilla and brown sugar. Beat for 5 minutes until it is light and fluffy and the sugar has dissolved. Spread evenly on top of the cake. Refrigerate after frosting.
 
I make this cake every Fall, mostly, due to the abundance of fresh crisp apples. It is yummy and so easy to make. Don't remember where I first found the recipe, but it popped up this morning on my FB feed, thought I would share.

sounds yummy!  i might use raisins instead of nuts....thanks!

@nana59, raisins would be good too. My hubby doesn't like raisins so I've not tried them.

I never used brown sugar in a frosting before and that's a lot of sugar in a cake recipe, but it sounds really good and I'm going to try it.

i always use less sugar than what the recipe calls for....with good results...

@blackhole99, with the cream cheese it will be really rich, I don't normally use a whole cup of brown sugar either, maybe about 1/2 to 2/3 of a cup.

I make a variation of this recipe with a warm vanilla cream sauce as a topping:

 

Cake:

1/2 cup softened butter

1 1/4 cup sugar

2 eggs

2 tsps vanilla

2 cups flour

2 tsps baking soda

1/2 tsp salt

2 tsps cinnamon

1/2 tsp nutmeg

4 cups (about 5 large) peeled, cored, and shredded apples with juice

 

Sauce:

1/4 cup butter

1/2 cup heavy whipping cream

1/2 cup sugar

1/4 tsp vanilla

 

Beat butter and sugar together in big bowl.  Mix in eggs and vanilla until light and creamy.  Whisk flour, baking soda, salt, cinnamon, and nutmeg in bowl.  Mix dry mixture into wet batter until just combined and very stiff.  Mix in apple and juice until just combined.

Spread batter into lightly-greased 9X13" baking pan.  Bake for 1/2 hour in 350 degree oven.

Stir butter, cream, and sugar in small saucepan over low heat until sugar is dissolved.  Gently simmer for 10 minutes, stirring often.  Stir in vanilla off heat and serve warm.

Yesterday we were talking about lazy baking. This is how I make this cake. 

1  Spice cake mix

4  cups apples

1  cup chopped pecans

1  t. vanilla 

Make to package directions,  adding next 2 ingredients. Bake as per directions. 

 

Frosting

1  can Cream Cheese frosting 

1  cup Cool Whip

Beat together, frost when cooled.

 

I'm sure the other one tastes better, but this is ok for us.

This looks delicious, I think I'll make it for Thanksgiving, it'll be a bit different than my usual desserts.

My aunt in the early 1960's made an apple cake very similar, however, she added a package of chocolate chips to the mix. It was to die for. One time she made a cooked frosting for it, chocolate and another time maple. Both frostings she cooked ontop of the stove until, when she poured a bit onto a plate it would harden a bit.

I loved it, because, if I didn't feel like a slice of cake, I could peel a bit of the frosting off of it! I was eleven at the time.
