Apple Dapple Cake
(recipe source: The Southern Plate)
This cake just screams FALL. It's really delicious. The original recipe called for much more butter, oil and sugar but I've revised it to fit in with a healthier lifestyle and I think it tastes great. Plus, it's super fast and easy to make.
Cake Ingredients
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 cup chopped pecans or walnuts. (I prefer walnuts) =)
1/2 cup vegetable oil
3/4 cup sugar
3 eggs
1 teaspoon vanilla
3 cups of raw apples, peeled and chopped fine. (I used Honey Crisp and Granny Smith)
Sauce
1/4 cup packed light brown sugar
1/4 cup milk
3 tablespoons of butter
Instructions:
1. For the cake: Mix oil, sugar, eggs and vanilla. Sift together the flour, salt, baking soda. Add to the wet mixture. Fold in pecans and apples. Grease and flour (lightly) a tube pan and pour in batter. Bake cake at 350 for approximately 1 hour.
2. For the sauce: Mix and cook milk, sugar and butter in a small sauce pan. 3 minutes AFTER if begins to gently boil (stirring constantly) pour over hot cake while cake is still in the pan. Let cake cool completely before removing.
