SPINACH TORTA by DiamondGirly

2 (10 oz) packages chopped frozen spinach

6 slices white bread (cut into ¼ inch cubes)

½ cup olive oil

1 cup milk

6 eggs, beaten

3-4 Tablespoons dried minced onions

2 teaspoons Italian Seasoning

1 teaspoon salt

1 teaspoon garlic powder

1 teaspoon black pepper

2/3 cup Parmesan Cheese

Paprika

Cook spinach as directed and drain. (I make in the microwave. You need to squeeze the water out of the spinach.) *Add bread, then all other ingredients in order listed, except Paprika, and mix together well.

Pour mixture into an 11 x 8-inch or 9 x 13-inch greased pan.

Spread mixture evenly in pan.

Sprinkle generously with Paprika. Bake at 350 degrees for 35-45 minutes.

Let cool before cutting into squares. (I cut into about 1-inch squares, and it makes a large plate full, stacked!)

Keep refrigerated, while not serving. ENJOY !!

*HINT: You can use bread with or without crust. I have used both. I’ve also frozen the bread before cutting it with a bread-slicing knife into ¼-inch pieces. This makes it easier to cut. If you put all the liquid ingredients over the bread in a bowl, it helps the bread to be easier to mix. Using a whisk helps, also. This can be made a day or more ahead of time…it stays very fresh!

Pizza Puffs

3/4 cup flour
3/4 tsp baking powder
1 tbsp Italian seasoning
1/4 tsp red pepper flakes (optional)
3/4 cup milk
1 egg, lightly beaten
1 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
1 cup cubed pepperoni
Pinch of salt
1/2 cup pizza sauce (of your choosing)

Preheat oven to 375.

Grease a 24-cup mini-muffin pan. In a large bowl, whisk together the four, baking powder, Italian seasoning, salt and red pepper flakes. Whisk in the milk and egg. Stir in the mozzarella, parmesan and pepperoni; let stand for 10 minutes.


Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes.

Meanwhile, microwave the pizza sauce until warmed through. Serve the puffs with the pizza sauce.
