This recipe has been out there for a while and is always a great one to use when you need an appetizer that is somewhat healthy! And they're pretty too! If you search online there's a bunch of variations.
Cucumber Dill Sandwhich Appetizer
1 English Cucumer sliced thin
8 oz whipped cream cheese
1 packet of Good Seasons dry salad dressing mix (you probably won't need the entire packet)
1 package cocktail bread - pumpernickel (my favorite) or rye
Fresh dill or dried dillweed to garnish
Combine whipped cream cheese with dressing mix. Add half of the packet and taste. Add more if needed. I don't like it too seasoned and usually use about 2/3 of the packet. Put in fridge for at least an hour to help the flavors develop. Spread some of the cream cheese mixture on each slice of bread. Top with a cucumber slice and then sprinkle with dill.
*don't make too far ahead or they will get soggy. I usually have the cream chesse mixture done ahead of time.
*you can use a brick of cream cheese, full or lowfat. Make sure it's softened and if needed, add a tablespoon of either sourcream or may to make it more spreadable.
*I've seen some versions call for ranch seasoning instead of the italian dressing mix.

I love cucumber sandwiches! Thanks for sharing the recipe. I also love cold cucumber soup. Ready for the summertime to get some good cukes!

OH! that sounds too good! I LOVE cucumber sandwiches.
Years ago, I had lunch at a deli. They were serving a "vegetable sandwich". The base was cucumber, a little carrot, and bell pepper. The binder was probably mayonnaise and cream cheese on a grained whole wheat bread. I would have rather had another sandwich compared to a steak!!

@ECBG that sounds good! I've done a wrap with veggies and humus, but I think using a cream cheese base would be even better!

That was around 1977. No one had a food processer, but as I got older I think they ground the items up and stopped at "slightly ground". The binder wasn't greasy, that's why now that I'm older, I think it was mayo with cream cheese.
If you try it, will you let me know please?

@SaveTheTurtles Agreed, I usually make these in the summer, but needed something on the lighter side yesterday. So we had these healthy apps and then I made nacho sauce with Velveeta.... sigh. But it was so good!

I like to eat a sliced cucumber and tomato sandwich with a touch of mayo, salt & pepper sandwich during the summer with iced tea, very refreshing.
