Re: Anyone with a tried and true Mexican ""lasagna"" recipe?

I have a recipe like that it uses corn tortillas, I think flour ones would just dissolve. The corn ones will hold their shape and taste.

Re: Anyone with a tried and true Mexican ""lasagna"" recipe?

I have no set recipe.I just lose whatever tortillas I have on hand. I fry the beef with taco seasoning. Then I layer like a regular lasagna. I use salsa for the sauce layer. So it's a little salsa to cover bottom, tortillas, meat, black beans, salsa, mexican blend cheese....repeat until dish is full...ending with cheese . Cover with no.stick foil and bake. Take foil off the last few minutes to brown. I have other toppings on the side. Not everyone likes black olives, etc so I offer them for topping along with sour cream, Pico de Gallo, cilantro, guacamole, and extra cheese.

I guess it would be a double insult if ""Mexican lasagna"" used cottage cheese.

I call it taco casserole.

I just use flour tortillas, fry a couple lbs of gr beef, I add the taco seasoning and salsa to that. Cheese and green onions. Layer it and bake.

Ha! Doncha know it! good one Smiley Happy

I say make it the way you want it, OP. This isn't the sort of thing that needs a recipe anyway. Use the meat you want with the seasonings you like, whatever cheese you like, and whichever tortillas you like. It's not something I make but I've made stuff like this in the way past and you just pretty much dump in what you like and in the oven it goes! Smiley Happy
