My mother used to make them with leftover meat. I cooked a pork roast on Sunday and it was rather tough. I wasn't sure what to do with the leftovers. I made rissoles tonight and they were delicious. I used my little chopper and minced the pork and added mashed potato. Then I seasoned and made the mixture into balls and coated with breadcrumbs. I fried them in butter. Older British women may have heard of rissoles - anyone out there?
