Anyone have an EASY sugar-substitute cookie recipe?

I understand that there's really no such thing as a cookie that's good for diabetics, but I'd like to have something to offer my dad tomorrow when the table is full of yummy treats for everyone else.

Does anyone have an easy cookie recipe that's sugar free? I have too much to do already to start something complicated.
