Anybody have a really good balsamic vinaigrette recipe?

Do you have a tried and true recipe for a good balsamic vinaigrette? Also, do you have a favorite brand of balsamic vinegar?

Re: Anybody have a really good balsamic vinaigrette recipe?

1/2 cup olive oil 1/4 cup balsamic vinegar 1shallot finely minced 1garlic clove finely minced 1teaspoon honey 1teaspoon Dijon mustard Salt and ground black pepper to taste Whisk ingredients together or just put them in a pint jar and shake. Makes about 8 servings. I just use Pompean dark balsamic aged in oak casks. This is my favorite recipe. In the summer when we have home grown tomatoes, I add a bit if chopped basil and use it as a dressing for caprese salad.

Thanks KentuckyWoman, I'll give it a try. I love shallots.

I do almost exactly the same as Kentucky woman except no shallot. I also love it on heirloom tomatoes warm from the garden with a little Gorgonzola crumbled on top.

Mine is almost the same, but my recipe calls for 1 tspn of brown sugar instead of honey. I don't add shallots but will add onion powder for extra flavor

This so easy... make it once and it's memorized:

1/4 cup oil

1 tsp vinegar (your choice)

1 tsp dijon mustard

1 tsp sugar (or honey)

dash salt and pepper (optional)

Shake in a container or whisk to emulsify... dang good on anything!

You can add to it like poppy seeds, raspberries, shallots, whatever you like.

Re: Anybody have a really good balsamic vinaigrette recipe?

I make a very similar vinaigrette except that I also add fresh lemon juice to mine, along with Sweet Heat, a spice from The Spice & Tea Exchange. I use a serrano chili and honey balsamic vinegar from A Taste of Olive. It is wonderful on anything and even tastes good by itself.

The next time that I hear salt and ice together, it better be in a margarita!
