I grilled a 1 lb. tenderloin last night and actually have half of it leftover.
Does anyone have a suggestion for a pasta dish using the leftover grilled tenderloin?

I think I might add it to my favorite Mac & Cheese recipe. It sounds yummy and would give the M & C a grilled flavor.

House_cat, how did you treat the pork, i.e., rub, marinade, season? I have a recipe for pork and pineapple rice that might work with leftover pork, depending on how it was treated. Just whistle if interested.

I used a marinade that included pineapple juice concentrate, chili powder and cumin.
The mac and cheese idea is good, but we had mac and cheese last week.

With that marinade - how about some linguine on penne in a light cream sauce of even alfredo with some peas or broccoli thrown in. I was going to suggest chopping it up and throwing in it with some pasta with garlic oul and broccoli but the spices seem to much - though I always make that when using up extra sausage.

I was leaning in that direction, too, mskitka. I have a jar of Alfredo sauce, but it's very heavy. I'll Google around for a lighter version.

Make Pork Stroganoff. Just add the cut up pork last so it just heats up good. Recooking it can make it tough. Enjoy!

I found this light Alfredo recipe. Since Alfredo is DH's favorite, I'll use this tonight.

I'd do a few things with it. You could serve it over long grain rice with a few veggies ad chinese noodles, soy sauce or teryaki. YUM!!!
You could also make frittatas or quesadillas, chalupas, anything mexicano. YUM!!!
And if pasta, I like to sautee onions and a mix of colored peppers (I buy these, cut up and freeze big bags of them for readiness anytiime). You could add fresh mushrooms and/or olives. Cook any pasta, add too veggies. Add a little of (almost) any sauce to just coat. Salad, Garlic bread. YUM!!!
