@house_cat, I'm late to the party, and you've already had your supper!

But, I wanted to share my fave way to serve corn.

I usually only do this with corn sliced off the cob, but frozen works too.

 

In a skillet, heat some butter, and add some finely diced jalapeno - as little or as much as you like. (IMO, the larger the jalapeno, the milder it is)

Add the corn, stir, throw on some Kosher salt, and some honey. I add about a Tablespoon or so, depending on the amount of corn.

Stir till corn is cooked the way you like, remove from heat and add lime juice (equal to, or more than the amount of honey) and chopped cilantro. Delish!

Serve w/ extra lime wedges.
