I'm making burgers tonight and i have a couple of small bags of frozen corn.  I'm looking for a simple way to jazz up the corn, without adding a lot of extra calories.

 

Any ideas?

I like sweet red peppers and broccoli mixed with corn.  It'll be colorful.

Fried Corn

 

Heat 2 Tab of butter in a heavy skillet.  Add corn and salt and pepper and fry on low heat.  Add either 1 tsp of thyme or 1 tsp of sugar.

Have you ever done this with frozen corn?

I usually add diced red bell peppers and some cumin seeds.  I've never added broccoli, but I like that idea.

I just throw it together, don't use a recipe, but this sounds about right, maybe a little more acid!   Ingredients

1 can, 14 ounces, black beans, rinsed and drained

2 cups frozen corn kernels

1 small red bell pepper, seeded and chopped

1/2 red onion, chopped

1 1/2 teaspoons ground cumin, half a palm full

2 teaspoons hot sauce, just eyeball the amount (recommended: Tabasco)

1 lime, juiced

2 tablespoons vegetable or olive oil, eyeball it

Salt and pepper

Directions
  1. Combine all ingredients in a bowl. Let stand at least 15 minutes for corn to fully defrost and flavors to combine, then toss and serve. The corn will also place a quick-chill on this easy side-salad as it defrosts -- no need to refrigerate!

Glad you like it!  I am absolutely hooked on the stuff.  I make mine pretty tart and add parsley or CILANTO (which I am crazy about and a friend thought I'd poisoned him with it!  LOL!!!  You either LOVE or HATE it!)!
