12 oz. frozen corn

1 can baked beans, rinsed

1 red pepper, diced

3 green onions, diced

1/4 C or to taste, Fat free dressing.  Catalina, or ...........your choice.

Hi sounds good but I think it is Black beans rinsed not baked beans.

Baked beans have a ton of sugar

@I am still oxox, well I checked my notes and it said baked beans.  But on this recipe, I bet you could be right.  I'll check next week with the leader, she brought it to us.  I mentioned in that meeting, that I have a crockpot soup that has black beans in it and she didn't say anything, but maybe she meant black beans, they'd be good in that salad too.

Went in and checked on a number of these things and they say black beans in many recipes.  So I'd go with the black beans.

Ingredients
  • 1 cup(s) canned white beans, drained and rinsed
  • 1 cup(s) canned black beans, drained and rinsed
  • 1 large fresh tomato(es), diced
  • 1 small uncooked onion(s), diced
  • 1 rib(s), medium uncooked celery, diced
  • 2 Tbsp white wine vinegar, or red wine vinegar
  • 3 Tbsp fresh parsley, Italian-variety, or basil, minced
  • 1/8 tsp table salt, or more to taste
  • 1/8 tsp black pepper, or more to taste
Instructions

In a large bowl, combine beans, tomato, onion and celery. Gently stir in vinegar and sprinkle with parsley or basil; season to taste with salt and pepper.

Serving size: 1 c

  • 1 cup(s) frozen corn kernels, or fresh
  • 8 medium uncooked scallion(s), sliced
  • 1/2 cup(s) fresh tomato(es), diced
  • 2 tsp fresh lime juice
  • 1 tsp ground cumin
Instructions

Combine all of the ingredients in a large bowl. Refrigerate, covered, until chilled, at least 2 hours. Yields about 1/2 cup of salad per serving.
