This might not sound good, but it is. And I have used left overs as a sauce as this makes a lot.

Chilled Spanish Soup

1 14 oz can of artichoke hearts, drained

1 C Roasted red peppers, drained

1 C Salsa

1 Anaheim chile, seeded & chopped (1/4 C) or 1- 4 1/2oz can diced green chili peppers,

drain (I used pepper flakes to taste)

1/8 tsp Cumin & Pepper

4 C Chicken broth or Veg. Broth....can sub 1 C water

1 1/4 C Sour Cream (I used fat free)

Combine all in blender till smooth. Chill 2-4 hours.

Serves 8 - 127 Cal, 9 gm fat, 1 gm fiber

I get my jared artichokes, roasted red peppers from Trader Joes and I use the whole jar instead of having small leftovers.
