Many years ago my mom and I used to watch an Amish cooking show on PBS - Marcia Adams Cooking from Quilt Country. It was such a fun show to watch and she always ended the show by showing a quilt stitched by Amish women. I bought my mom the cookbook back then and she often makes their Oatmeal Pie. It's similar to a pecan pie, but not as sweet. It's one of my dad's favorites.

Amish Oatmeal Pie
1 pre-baked 9 inch pie shell
4 eggs
1 c sugar
2 T all purpose flour
1 t cinnamon
1/4 t salt
1 c light corn syrup
2 T butter, melted
1 t grated orange rind (optional)
1 t vanilla extract
1 c one-minute quick cook oatmeal, uncooked

Preheat oven to 350. In a large bowl, beat the eggs until frothy. Combine the sugar, flour, cinnamon and salt in a small bowl. Add to the eggs and blend. Add the corn syrup, melted butter, orange rind, and vanilla. Blend again. Mix in the oatmeal and pour into the baked pie crust. Bake for 45 minutes. Let cool completely and serve at room temperature.
